Yu-shiang Pork

Slightly-spicy shredded pork and vegetables

Yu-shiang Pork

Ingredients

Prepped ingredients

See picture above for example of “shredded” prep.

  • 34 lb of pork loin, shredded
  • wood ears, shredded (if available, they come dry and need to soak for 30 min)
  • 6 water chestnut; sliced and shredded
  • 1-2 sweet green and/or red peppers, shredded
  • 1 tsp garlic, diced
  • 1 tsp ginger, diced
  • 1-2 scallions, chopped for garnish

Sauce

  • 1.5 tbs soy sauce
  • 1.5 tbs chinese vinegar
  • 1.5 tbs wine
  • 1 tbs Chinese hot chili paste, or Sriracha sauce
  • 2 tsp sugar
  • a few pinches of white pepper

Instructions

  • Heat some oil in a pan and stir fry pork until white
  • Drain and leave oil and drippings in wok
  • Stir fry veggies until mostly cooked (~3 mins)
  • Return pork and add sauce
  • Stir fry another minute until everything mixed
  • Garnish with scallion and serve
