Lamb and Leeks

Low-sauce, delicate, lamb and leek dish

Lamb and Leeks


Prepped ingredients

  • 2/3 lb of lamb; trimmed of fat and slice across grain
  • 2 leeks; sectioned and sliced (see picture)
  • 5 cloves of garlic; sliced (see picture)
  • 1 tbs of fermented Chinese black beans (can eliminate of not available)


  • 2 tbs of soy sauce
  • 2 tbs of wine
  • a few pinches of chinese pepper corn powder


  • 2 tbs soy sauce
  • 2 tbs Chinese vinegar
  • 1 tbs of sesame oil
  • 1 tsp of corn starch


  • Marinade lamb in marinade ingredients and let sit at least 30 mins
  • Stir fry lamb quickly in oil until meat turns write
  • Remove lamb, leaving oil and juices
  • Stir fry garlic and leek in remainder of oil and juices until soft
  • Add back lamb
  • Add sauce and stir until done
